¼ cup warm water (105–110°f / 40–43°c)
½ cup whole milk, warmed to about 100°f (38°c)
¼ cup granulated sugar
3 ½ cups all-purpose flour, plus more for dusting
½ tsp salt
½ tsp ground cinnamon
¼ tsp ground cardamom
¼ tsp ground nutmeg
2 large eggs, at room temperature

For the filling

7 oz marzipan

Sprinkle the yeast over the warm water in a small bowl and let stand for 5–10 minutes, until foamy and active.
