There is something deeply satisfying about pulling a crackling, mahogany-crusted loaf from a screaming-hot Dutch oven, and this sourdough delivers exactly that kind of reward. The dough comes together from just five ingredients — bread flour, whole wheat flour, sea salt, water, and a bubbly active starter — making it as clean and straightforward as bread can get. The whole wheat flour adds a subtle earthiness and depth that keeps the flavor interesting without weighing down the open, airy crumb you're working toward. Stretch-and-folds build strength gradually, the long bulk fermentation develops real complexity, and an overnight cold proof in the fridge means you can fit this into a real schedule rather than hovering over the bowl all day. Baking it covered traps steam for that signature blistered crust, then uncovering lets the color deepen into something genuinely beautiful. The hardest part is waiting the full hour before slicing — but skip it and you'll end up with a gummy interior, so trust the process. Once you've made this loaf, it's very difficult to go back to anything from a plastic bag.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
