There is something deeply satisfying about pulling a crackling, mahogany-crusted loaf from a screaming-hot Dutch oven, and this sourdough delivers exactly that kind of moment. The ingredient list is refreshingly short β just flour, water, salt, and a live starter β which means it naturally sidesteps the legumes that sneak into so many commercial breads as additives, fillers, or flour blends. The process leans on time and technique rather than anything exotic: an autolyse rest, a series of stretch-and-folds, and a long cold proof in the refrigerator all work together to build flavor and that open, chewy crumb. Scoring the cold dough with a confident slash before it hits the Dutch oven gives the loaf room to bloom dramatically in the oven, creating that signature ear and blistered crust. Baking covered first traps steam so the crust stays pliable long enough for a full rise, then the lid comes off to let the color deepen to a gorgeous deep brown. The hardest part is genuinely waiting the full hour before slicing β skip it and the crumb turns gummy, honor it and you get clean, beautiful slices with a glossy interior. Once you have this method down, store-bought bread starts to feel like a very unnecessary compromise.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30β45 minutes (autolyse).
