There is something deeply satisfying about pulling a crackling, mahogany-crusted loaf from the oven, and this sourdough delivers that experience with nothing but flour, water, salt, and a lively starter. Every ingredient here is naturally free of dairy, so there is no need to swap anything out or second-guess a label — the recipe is clean from the very first mix. The process walks you through autolyse, stretch-and-folds, and an overnight cold proof, all of which build the kind of open, chewy crumb and blistered crust that rival anything from a bakery counter. Baking inside a preheated Dutch oven traps steam during the first phase, giving the loaf that dramatic oven spring and glossy, shattering crust without a single drop of butter or milk. The whole wheat flour adds a gentle nuttiness and depth that keeps the flavor interesting without overwhelming the tang from the fermentation. Patience is the main ingredient — bulk fermentation and the long cold proof do the heavy lifting, so your hands-on time is surprisingly minimal. Let it cool fully before you slice, and you will be rewarded with a loaf that is genuinely worth the wait.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
