There is something deeply satisfying about pulling a crackling, mahogany-crusted loaf from a screaming-hot Dutch oven, and this sourdough delivers exactly that. The ingredient list is refreshingly short β just starter, water, bread flour, whole wheat flour, and sea salt β so there is genuinely nothing hidden to worry about, no oils, no additives, no surprises. The whole wheat flour adds a subtle earthiness and a little extra nutrition without weighing down the open, chewy crumb that good sourdough is famous for. The process does take time, but most of it is hands-off: a long bulk fermentation, a few rounds of stretch-and-folds, and an overnight cold proof do the heavy lifting while you sleep. Baking the loaf covered in a Dutch oven traps steam in the early stages, which is what gives you that blistered, shattering crust and the dramatic ear from your scoring slash. Once it comes out of the oven, the hardest part is waiting the full hour before you slice β but that patience is rewarded with a crumb that is airy, slightly tangy, and perfectly set. Whether you toast it thick with butter or use it as the base for a serious sandwich, this is the kind of bread that makes you wonder why you ever bought a bag from the store.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30β45 minutes (autolyse).
