There is something deeply satisfying about pulling a crackling, mahogany-crusted loaf from a screaming-hot Dutch oven, and this sourdough delivers exactly that kind of moment. The ingredient list is beautifully minimal — bread flour, whole wheat flour, sea salt, water, and a lively starter — so there is nothing here that could sneak in unwanted stimulants or additives. Wild yeast fermentation does all the heavy lifting, giving the crumb its open, chewy texture and the crust its audible crunch without a single packet of commercial yeast or anything else to worry about. The process unfolds in relaxed stages — an autolyse rest, gentle stretch-and-folds, a long bulk fermentation, and an overnight cold proof — so it fits around a real schedule rather than demanding your full attention for hours on end. Scoring the cold dough with a confident slash right before it hits the oven is one of those small, satisfying rituals that makes home baking feel genuinely artisan. Waiting the full hour before slicing is the hardest part, but it is the difference between a gummy interior and a perfectly set, glossy crumb that holds its shape beautifully. Once you have a reliable starter and a Dutch oven, this becomes the kind of recipe you return to every single weekend.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
