There is something deeply satisfying about pulling a crackling, mahogany-crusted loaf out of a screaming-hot Dutch oven, and this sourdough delivers that moment every single time. The ingredient list is beautifully short — just bread flour, whole wheat flour, water, salt, and a live starter — so you know exactly what's going into every slice, which matters a lot when you're thinking carefully about what you eat and pass along through breast milk. Whole wheat flour brings a subtle nuttiness and a little extra nutrition alongside the bread flour, giving the crumb both structure and depth. The long, cold overnight proof does most of the heavy lifting while you sleep, so the active hands-on time is far more manageable than the process might look at first glance. Stretch-and-folds build that open, chewy crumb without any kneading, and the Dutch oven traps steam to create that signature blistered crust you'd expect from a serious bakery loaf. Once it cools and you cut into it, the crumb is airy and tender — perfect toasted with butter, layered into a sandwich, or eaten warm straight off the rack. Simple, wholesome, and genuinely worth the wait.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
