There is something deeply satisfying about a loaf of bread made from nothing more than flour, water, salt, and a living starter — and this classic sourdough delivers exactly that kind of honest, from-scratch reward. Because the only leavening here is a naturally fermented starter, there are no commercial additives, preservatives, or synthetic antioxidants like BHA or BHT anywhere in the process, which is genuinely hard to guarantee with most store-bought breads. The dough goes through a long bulk fermentation, a careful pre-shape, and an overnight cold proof, all of which develop a complex, tangy flavor and an open, chewy crumb that packaged loaves simply cannot replicate. Baking inside a preheated Dutch oven traps steam during the first phase, giving you that dramatic, crackling mahogany crust that shatters when you press it. The ingredient list is refreshingly short — active starter, bread flour, a touch of whole wheat for depth, sea salt, and water — so you know exactly what is going into every slice. Patience is the main skill required here, and the process is more forgiving than it looks once you get a feel for the dough. Slice it thick, toast it, or just tear into it warm from the rack.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
