There is something deeply satisfying about a loaf of bread made from nothing but flour, water, salt, and a living starter — and this classic sourdough delivers exactly that. Every ingredient here is whole and recognizable, which means no synthetic flavor enhancers, no additives, and none of the mystery that comes with store-bought loaves. The wild fermentation from the bubbly starter does all the heavy lifting, developing that signature tangy depth and complex aroma that no artificial shortcut could replicate. The process moves through an autolyse rest, a series of stretch-and-folds, a long bulk fermentation, and an overnight cold proof — each step building flavor and structure the natural way. Baking the loaf inside a preheated Dutch oven traps steam to give you that crackling, mahogany crust, while the interior bakes into an open, chewy crumb. Letting it cool fully before slicing is the hardest part, but it ensures the texture sets up perfectly. Once you taste a slice with nothing but a little butter, it becomes very clear why this method has endured for centuries.

In a large mixing bowl, whisk together the sourdough starter and 350 g of the lukewarm water until the starter is fully dissolved and the mixture looks milky and slightly foamy.
Add the bread flour and whole wheat flour to the bowl and mix with your hand or a stiff spatula until no dry flour remains and a shaggy dough forms. Cover the bowl and let the dough rest for 30–45 minutes (autolyse).
