Bring a large pot of water to a boil over high heat. Add the soba noodles and cook according to package directions, usually 4ā5 minutes, until tender with no chalky center when bitten.
Drain the noodles in a colander and rinse immediately under cold running water, rubbing them gently with your hands, until completely cool and no longer starchy.
