2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp dill pickle brine
½ tsp garlic powder
½ tsp onion powder
¼ tsp smoked paprika

For the burgers

1 ½ lb 80/20 ground beef
1 tsp kosher salt
½ tsp black pepper
1 tbsp neutral oil (such as canola oil or vegetable oil)
8 slices american cheese
4 brioche burger buns
1 tbsp unsalted butter, softened

For serving

1 medium white onion, very thinly sliced
dill pickle slices
shredded iceberg lettuce (optional)
tomato slices (optional)

Instructions

1
Make the burger sauce: stir together the mayonnaise, ketchup, yellow mustard, pickle brine, garlic powder, onion powder, and smoked paprika in a small bowl until smooth. Refrigerate until ready to use.
2
Divide the ground beef into 8 equal loose balls (about 3 oz each). Do not pack or shape them — keep them shaggy. Season the tops generously with salt and pepper just before cooking.
