Tangy, crunchy, and alive with flavor, this fermented cabbage is one of those kitchen projects that feels almost magical once you understand how simple it really is. Just two ingredients do the heavy lifting β cabbage and salt β with optional caraway seeds for a subtle, earthy warmth. The salt draws out the cabbage's natural juices through a good ten minutes of hands-on massaging, creating the brine that protects and transforms everything in the jar. No vinegar, no additives, no preservatives β just lacto-fermentation doing exactly what it has done for centuries. Because the ingredient list is so clean, this is naturally free of any animal products, making it a perfect pantry staple for plant-based cooking without any label-reading stress. The flavor deepens the longer you let it ferment, so you can pull it at seven days for something mild and crisp or wait a few weeks for a more assertive, complex sourness. Once it hits your preferred tang, it goes straight into the fridge and keeps beautifully, ready to pile onto grain bowls, sandwiches, or anything else that needs a bright, probiotic punch.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
