Tangy, crunchy, and deeply satisfying, this homemade fermented cabbage is one of those kitchen projects that feels almost magical β just two humble ingredients and a little patience transform into something genuinely complex and delicious. For anyone avoiding seeds, the caraway is clearly marked as optional and easy to skip entirely, leaving you with a clean, pure ferment that relies on nothing but cabbage and salt. The process is beautifully low-tech: you shred, massage, pack, and wait, letting natural fermentation do all the heavy lifting over one to four weeks. Massaging the cabbage until it releases its own brine is the key step, and watching that liquid pool in the bowl is oddly one of the most satisfying moments in home cooking. Daily check-ins keep things on track β pressing the cabbage below the brine and skimming any foam β but the hands-on time is minimal once the jar is packed. The result is a bright, pleasantly sour condiment that's incredible piled onto sandwiches, stirred into grain bowls, or eaten straight from the jar. Once you taste a batch you made yourself, the store-bought stuff is hard to go back to.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
