Tangy, crunchy, and deeply satisfying, this classic fermented cabbage is one of those recipes that feels almost magical once you understand how simple it really is. Just cabbage, salt, and a little patience β that's genuinely all it takes to build serious flavor. Because the whole process relies on natural lacto-fermentation, there's no vinegar, no preservatives, and absolutely nothing that could sneak in a grain-based ingredient to worry about. Massaging the salt into the shredded cabbage draws out its own liquid, which becomes the brine that keeps everything safe and tangy as it ferments on your counter over the next few weeks. The optional caraway seeds add a subtle earthy note that makes it taste like something straight out of a European deli. You control the sourness by tasting as you go β pull it at seven days for something mild and crisp, or let it ride closer to four weeks for a deeper, more complex punch. Once it hits the fridge, it keeps beautifully and works alongside just about everything on the plate.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
