Tangy, crunchy, and made from just two simple ingredients, this homemade fermented cabbage is a surprisingly satisfying kitchen project. During pregnancy, store-bought fermented foods can feel like a gamble β labels don't always tell you how the product was handled or how long it's been sitting β so making your own gives you full visibility into every step. The process is straightforward: shred, salt, massage, pack, and wait. That hands-on massaging step is key, coaxing the cabbage to release its own natural brine so the fermentation happens in a clean, controlled environment right in your kitchen. Caraway seeds are optional but add a lovely earthy depth if you're in the mood for a little extra flavor. You can start tasting as early as seven days in, and the batch is ready whenever the sourness hits just right for you β usually somewhere between two and four weeks. Pile it onto grain bowls, tuck it alongside eggs, or eat it straight from the jar as a probiotic-rich snack you made entirely yourself.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
