Tangy, crunchy, and deeply satisfying, this classic fermented cabbage is one of those kitchen projects that feels almost magical β just two humble ingredients and time do all the heavy lifting. The process is beautifully straightforward: shred, salt, massage, pack, and wait. Massaging the cabbage until it releases its own brine is the key step, creating the liquid environment where fermentation happens naturally without any vinegar shortcuts. Caraway seeds are optional but add a subtle earthy warmth that makes the finished kraut feel a little more old-world and complex. Since the only ingredients here are cabbage, salt, and an optional spice, there's absolutely nothing to second-guess β no packaged seasonings, no mystery additives, just clean and simple whole food. The fermentation window is flexible too, so you can pull it at seven days for a mild, crisp result or let it ride for a month if you love a deeply sour punch. Once it's in the fridge, it keeps for months and makes everything from bratwurst to grain bowls taste like you really know what you're doing.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
