Tangy, crunchy, and alive with flavor, this fermented cabbage is one of those pantry staples that rewards a little patience with something genuinely special. The whole process relies on just cabbage, salt, and time β no vinegar shortcuts, no preservatives, just the natural magic of lacto-fermentation doing its thing. Massaging the salt into the shredded cabbage draws out enough liquid to create its own brine, which is what keeps everything safe and slowly sour as it ferments on your counter. Optional caraway seeds add a subtle earthy note that makes the finished kraut feel a little more complex without any extra effort. Since the only ingredients here are plant-based, it fits naturally into a pescatarian kitchen as a condiment, side, or topping for fish tacos, grain bowls, or a simple piece of pan-seared salmon. The flavor deepens the longer you let it go β a week in and it's bright and mild, a month in and it's properly funky and bold β so you get to decide exactly when it's done. Once it hits your fridge, it keeps for months, making it one of the most satisfying things you can make from a single head of cabbage.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
