Tangy, crunchy, and deeply satisfying, this fermented cabbage is the kind of pantry staple that makes everything from bratwurst to grain bowls taste more alive. Store-bought versions often sneak in preservatives and additives to extend shelf life, but this recipe keeps things completely clean β just cabbage, non-iodized salt, and optional caraway seeds. The magic here is pure lacto-fermentation: the salt draws moisture out of the cabbage, creating a natural brine that does all the preserving work on its own, no vinegar or curing agents needed. Massaging the shredded cabbage until it releases its liquid is the most satisfying step, and packing it tightly into a mason jar couldn't be simpler. You'll want to check on it daily at first, pressing the cabbage back under its brine and watching the slow, bubbling transformation happen right on your counter. Somewhere between one and four weeks later, you'll have a jar of genuinely complex, probiotic-rich sauerkraut that you made with your own hands. It keeps beautifully in the fridge once it hits your preferred level of sourness, ready to pile onto whatever needs a bright, fermented punch.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
