Tangy, crunchy, and deeply satisfying, this fermented cabbage is one of those pantry staples that rewards a little patience with a whole lot of flavor. Just two main ingredients β cabbage and salt β do all the heavy lifting here, with optional caraway seeds adding a subtle earthy note if you're into it. The magic happens through lacto-fermentation: massaging the salt into the shredded cabbage draws out its natural juices, creating a brine that preserves and transforms it over one to four weeks at room temperature. Because the entire process relies on fresh cabbage and salt with zero added fillers or flavor enhancers, there's nothing hidden to worry about β what you see is exactly what you get. Store-bought versions can sometimes include additives or be processed on shared equipment, so making your own puts you fully in control of every ingredient. You get to taste as it ferments and pull it from the counter the moment it hits your perfect level of sourness, whether that's a gentle week-old tang or a punchy month-long ferment. Pile it on sausages, stir it into grain bowls, or eat it straight from the jar β it's that good.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
