Fermented foods have been a cornerstone of traditional Mediterranean eating for centuries, and this simple two-ingredient kraut is about as close to the source as it gets. Green cabbage and non-iodized salt are all you truly need β the caraway seeds are optional but add a warm, slightly earthy note that makes the finished product feel a little more special. The magic here is lacto-fermentation, where the cabbage essentially preserves itself in its own brine, developing a bright, tangy flavor that deepens the longer you let it go. Massaging the salt into the shreds until the liquid pools at the bottom of the bowl is the most satisfying part of the process, and it sets the whole ferment up for success. Because there are no vinegars, additives, or preservatives involved, what you end up with is a living food packed with the kind of gut-friendly cultures that fit naturally into a whole-food, plant-forward way of eating. Tasting it daily from the one-week mark lets you dial in exactly the level of sourness you want β mild and crunchy or deeply sour and complex, the choice is entirely yours. Once it hits the fridge, it keeps for months and works beautifully as a condiment, a side, or stirred into grain bowls and salads.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
