Tangy, crunchy, and deeply satisfying, this homemade fermented cabbage is one of those kitchen projects that feels almost magical once you understand how simple it really is. Just two main ingredients β cabbage and salt β do all the heavy lifting, with optional caraway seeds adding a subtle earthy warmth if you're into that. The process is entirely hands-on in the best way: you massage the cabbage until it releases its own natural brine, then let time and beneficial bacteria transform it into something complex and alive. Because you're making it from scratch in a mason jar, there's zero guesswork about what went into it β no mystery additives, no shared production lines, just pure fermented goodness. Checking on it each day as the bubbles form and the sourness slowly builds is genuinely one of the more rewarding things you can do in a kitchen. Taste it at the one-week mark for a mild, crisp result, or let it go a full month if you want that deep, punchy tang. Once it hits your fridge, it keeps beautifully and makes everything from bratwurst to grain bowls taste like you really know what you're doing.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
