Fermented foods have a complicated reputation for people managing acid reflux, but this slow, naturally fermented kraut is a different story from the vinegar-soaked versions lining grocery store shelves. The live cultures produced during lacto-fermentation may actually support digestive health rather than aggravate it, and the process here uses nothing but cabbage, salt, and an optional pinch of caraway seeds β no harsh acids, no additives, no preservatives. Massaging the cabbage until it releases its own brine is the key step, and it's oddly satisfying once you see the liquid pooling in the bowl. From there, patience does most of the work: a week of room-temperature fermentation gets you something mild and crunchy, while two to four weeks builds a deeper, more complex tang you can dial in to your own tolerance. Starting with a small taste at the seven-day mark lets you find the sweet spot before the sourness climbs too high. The result is a condiment that's genuinely versatile β a forkful alongside a simple protein or tucked into a wrap adds brightness without the burn that store-bought versions can trigger.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
