Tangy, crunchy, and deeply satisfying, this classic fermented cabbage is one of those recipes that feels almost magical once you understand how little it actually takes to make. Just cabbage, salt, and a little patience β no vinegar shortcuts, no exotic add-ins, and absolutely nothing that could sneak in unwanted ingredients the way store-bought versions sometimes do. The process relies entirely on the natural lactobacillus bacteria already living on the cabbage leaves, which means the brine you create through massaging and salting does all the heavy lifting. Optional caraway seeds add a subtle earthy warmth, but the base recipe is beautifully minimal. Packing the jar tightly and keeping everything submerged under brine is the real key to success, and the daily check-ins during the first week make you feel genuinely connected to what you're making. By the end of week one you'll already have something worth tasting, and by week two or three you'll have a jar of bright, funky, probiotic-rich kraut that blows anything from the refrigerated aisle completely out of the water. It keeps in the fridge for months, so one batch goes a very long way.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
