Tangy, crunchy, and deeply satisfying, this homemade fermented cabbage is one of those kitchen projects that feels almost magical once you understand how simple it really is. Just cabbage, salt, and a little patience β no vinegar, no citrus, no acidic shortcuts β which makes it a genuinely safe pick when you need to avoid anything from the citrus family. Many store-bought versions sneak in lemon juice or other acidic additives to speed up the process, so making your own from scratch puts you fully in control of what goes into the jar. The fermentation happens naturally as the salt draws moisture out of the cabbage and creates a brine that slowly turns pleasantly sour all on its own. A pinch of caraway seeds is optional but adds a subtle, earthy warmth that takes the flavor somewhere really special. The process rewards attention β daily check-ins, a taste here and there β and somewhere between one and four weeks you'll have a jar of something genuinely alive and delicious. Pile it on sausages, stir it into grain bowls, or eat it straight from the jar; once you've made your own, it's hard to go back.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
