Tangy, crunchy, and deeply satisfying, this classic fermented kraut is one of those pantry staples that rewards a little patience with a whole lot of flavor. It's made with just cabbage, salt, and optional caraway seeds β nothing hidden, nothing processed, and completely free of any meat or poultry by nature. The magic here is lacto-fermentation: massaging salt into shredded cabbage draws out its natural juices, creating a brine that slowly transforms the raw shreds into something complex and pleasantly sour over the course of one to four weeks. Checking the jar daily, pressing the cabbage back under its brine, and tasting as it develops makes the whole process feel surprisingly hands-on and rewarding. The caraway seeds are optional but add a subtle earthy note that pairs beautifully with the acidity. Once it hits your preferred level of tang, it goes straight into the fridge where it keeps beautifully for months β ready to pile onto sandwiches, stir into soups, or eat straight from the jar.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
