Tangy, crunchy, and alive with probiotic goodness, this homemade fermented cabbage is one of those kitchen projects that feels almost magical once you understand how simple it really is. Just two main ingredients β cabbage and salt β do all the heavy lifting, with optional caraway seeds adding a subtle earthy note if you're into that. The process is entirely hands-on in the best way: you massage the cabbage until it releases its own natural brine, which then becomes the fermenting liquid that transforms everything over the following weeks. Because you're making it from scratch with nothing but whole, straightforward ingredients, there's zero guesswork about what's actually in the jar β no hidden additives, no shared-facility concerns, just pure fermented cabbage. Checking on it daily feels oddly satisfying, and tasting it as it develops that signature sourness is genuinely fun. Whether you pull it at seven days for something mild and crisp or let it go the full four weeks for deep, complex tang, the result is endlessly versatile β piled onto sausages, stirred into grain bowls, or eaten straight from the jar with a fork.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
