Tangy, crunchy, and deeply satisfying, this fermented cabbage is one of those pantry staples that feels almost magical once you understand how simple it really is. With just cabbage, salt, and optional caraway seeds, there is nothing hiding in the ingredient list β no spice blends, no vinegar shortcuts, and absolutely nothing that could sneak in unwanted heat or irritation for those avoiding black pepper. The process is hands-on in the best way: you massage the cabbage until it releases its own brine, pack it into a jar, and then let time and natural fermentation do the heavy lifting. Checking on it daily feels oddly satisfying, watching the bubbles form and the smell shift from fresh and grassy to properly sour and complex. You can start tasting at the one-week mark and keep going until it hits exactly the level of tang you love β anywhere from bright and mild to deeply funky and sharp. Once it's ready, it goes straight into the fridge and keeps for months, ready to pile onto sausages, stir into soups, or eat straight from the jar with a fork.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
