Few fermented foods are as satisfying to make from scratch as a good batch of sauerkraut, and this version keeps things beautifully simple β just cabbage, salt, and optional caraway seeds doing all the work. Many store-bought versions contain preservatives that people following a clean, additive-free diet need to avoid, so making your own is genuinely the best solution. The process relies entirely on natural lacto-fermentation: salt draws moisture out of the cabbage, creating a brine that protects the shreds while beneficial bacteria slowly transform them into something tangy and complex. Massaging the cabbage by hand is oddly therapeutic, and watching the brine pool in the bowl feels like a small kitchen miracle every time. You control the sourness by tasting as it ferments β mild and crunchy at one week, deeply tangy and soft by week four β so it's completely tailored to your palate. The caraway seeds are optional, but they add a subtle earthy warmth that makes the finished kraut feel a little more special on a bratwurst or a grain bowl. Once it hits the fridge, you've got a jar of probiotic-rich, preservative-free sauerkraut ready to go for weeks.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
