Tangy, crunchy, and alive with beneficial bacteria, a good batch of homemade sauerkraut is one of the most rewarding things you can make with just two ingredients and a little patience. For anyone navigating an autoimmune protocol, fermented foods like this are a genuine staple β gut-supportive, deeply nourishing, and completely free of the additives and preservatives that sneak into store-bought versions. The process here is beautifully simple: shred, salt, massage, pack, and wait. That hands-on massaging step is key β it draws out enough natural liquid from the cabbage to create its own brine, which is what keeps everything safely submerged and fermenting. Caraway seeds are listed as optional, so if you're in a stricter elimination phase, you can leave them out entirely and still get a fantastic result. The fermentation window runs anywhere from one to four weeks, giving you full control over how mild or punchy you want the final flavor. Once it hits that perfect sourness, it moves to the fridge and keeps beautifully β ready to pile onto bowls, serve alongside proteins, or eat straight from the jar.

Quarter the cabbage through the core, cut out and discard the core, then slice each quarter crosswise into thin shreds about 1/8-inch thick using a chef's knife or mandoline. Reserve one or two of the large outer leaves before discarding the rest.
Transfer the shredded cabbage to a large mixing bowl. Sprinkle the salt evenly over the top and toss to distribute. Let it sit for 5 minutes, then massage and squeeze the cabbage firmly with both hands for 8β10 minutes, until it has released a significant amount of liquid and the shreds feel limp and wet β the brine should pool visibly at the bottom of the bowl.
