Preheat the oven to 425°F (220°C). Place a large baking sheet in the oven while it preheats.
Place the potato chunks in a large pot and cover with cold water by at least 1 inch. Add a generous pinch of kosher salt and bring to a boil over high heat. Cook for 8–10 minutes, until the potatoes are just barely tender when pierced with a knife — they should yield with slight resistance, not fall apart.
