This bright, protein-packed grain salad is built on fluffy quinoa, hearty chickpeas, crisp cucumber, and juicy cherry tomatoes, all tossed with a punchy garlic-lemon dressing whisked from good olive oil and Dijon mustard. Fresh parsley and red onion add color and bite, while a hit of cumin gives the whole bowl a warm, earthy depth. It's a naturally plant-forward dish that leans on whole grains, legumes, and fresh vegetables, exactly the kind of everyday combination this way of eating is built around. Serve it at room temperature alongside grilled vegetables or fish, or pack it for lunch since it holds up beautifully in the fridge for days. Simple, olive-oil-driven, and full of texture, this salad is a genuinely great fit for a Mediterranean-style table.

Combine the rinsed quinoa, water, and 1/4 tsp salt in a medium saucepan and bring to a boil over high heat. Reduce the heat to low, cover, and cook until the quinoa has absorbed all the water and the germ rings are visible around each grain, about 12–14 minutes.
Remove the pan from the heat and let the quinoa steam, covered, for 5 minutes. Uncover, fluff with a fork, and spread onto a large plate or sheet pan to cool for at least 10 minutes until no longer steaming.
