Preheat the oven to 400°F (205°C). Pat the pork cubes dry with paper towels and season all over with the salt and pepper.
Heat the vegetable oil in a large oven-safe skillet or Dutch oven over medium-high heat until shimmering. Add the pork in a single layer — work in two batches if needed to avoid crowding — and sear undisturbed for 3–4 minutes per side until deep golden brown on at least two sides. Transfer the browned pork to a plate and set aside.
