Sweet, fragrant, and endlessly refreshing, this peach iced tea is the kind of drink that makes a hot afternoon feel like a genuine occasion. The real star is the homemade peach syrup — ripe peaches simmered down with sugar and water until they're soft and jammy, then strained into a silky, golden liquid that tastes like summer in a glass. Because everything here is built from scratch with whole, simple ingredients, there's no need to scan labels for hidden additives or worry about the sneaky nightshade-derived colorings and flavorings that can show up in commercial iced teas and flavored syrups. Black tea forms a clean, robust base that lets the peach shine without competing with it. A long chill in the fridge brings it all together into something that's genuinely better than anything you'd pour from a bottle. Serve it over plenty of ice with a few fresh peach slices and a sprig of mint for a presentation that looks far more effortful than it actually is.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the saucepan from the heat and let the peach mixture cool for 5 minutes, then press it through a fine-mesh strainer into a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much syrup as possible. Discard the solids.
