Sweet, fruity, and deeply refreshing, this peach iced tea is the kind of drink that makes a hot afternoon feel like a genuine occasion. The homemade peach syrup is the real star — ripe peaches are simmered down with sugar and water until they practically melt, then strained into a silky, fragrant concentrate that tastes nothing like the artificial stuff. Managing iodine intake can get tricky with packaged beverages, flavored syrups, and food dyes, but every ingredient here is straightforward and naturally free of the additives that tend to cause concern. Brewed black tea forms a clean, robust base, and when the peach syrup is stirred in, the whole pitcher takes on this gorgeous amber color that looks almost too pretty to drink. A handful of ice, a few fresh peach slices, and a sprig of mint turn it into something you'd happily serve at a dinner party or sip solo on the porch. It's the kind of recipe you'll come back to all summer long.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the saucepan from the heat and let the peach mixture cool for 5 minutes, then press it through a fine-mesh strainer into a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much syrup as possible. Discard the solids.
