Few drinks capture the feeling of a slow summer afternoon quite like a tall glass of peach iced tea, and this homemade version is genuinely hard to beat. The secret is a quick peach syrup made from real ripe peaches, sugar, and water — simmered until the fruit breaks down and releases all that sweet, fragrant juice. Straining it into freshly brewed black tea gives you a drink that's layered, naturally fruity, and miles ahead of anything from a powder packet. Since every ingredient here is inherently free of gluten, there's no label-reading stress or substitutions required — just clean, simple components that come together beautifully. Garnished with fresh peach slices and a sprig of mint, it looks as good as it tastes. Make a big pitcher and keep it in the fridge — it disappears fast.

Combine the chopped peaches, sugar, and 1/2 cup water in a medium saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the peaches soften and begin to break down, about 8–10 minutes.
Remove the saucepan from the heat and let the peach mixture cool for 5 minutes, then press it through a fine-mesh strainer into a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much syrup as possible. Discard the solids.
