Chef's tip
Use the same volume. Baking behavior varies by blend: some brown faster or stay softer, while others brown less. Follow the package's baking guidance and start checking a few minutes early.
1 tsp pure vanilla extract

For the berry coulis

1 cup mixed fresh berries (strawberries, raspberries, or blueberries)
1 tbsp granulated sugar

1 tsp fresh lemon juice

Instructions

1
Sprinkle the gelatin evenly over the cold water in a small bowl and let it sit for 5 minutes, until the granules are fully absorbed and the mixture looks like wet sand.
2
Combine the heavy cream, whole milk, and sugar in a small saucepan over medium heat, stirring occasionally, until the sugar is fully dissolved and the mixture is steaming and just beginning to show small bubbles at the edges — do not let it boil. Remove from heat.
