Fresh, bright, and endlessly refreshing, this alcohol-free take on a classic mojito is built entirely from ingredients you can feel good about. There are no hidden additives, no mystery syrups from a bottle, and absolutely nothing processed β just mint, lime, sparkling water, and a quick homemade simple syrup you whip up in minutes. Avoiding industrially processed oils is usually a concern with packaged foods and store-bought mixes, but this drink sidesteps all of that entirely by starting from scratch. Muddling the mint releases its natural oils and turns the whole glass a gorgeous pale green before you've even added the ice. The homemade syrup dissolves cleanly into the lime juice, giving you just the right balance of sweet and tart without any of the gummy aftertaste you get from commercial alternatives. It's the kind of drink that looks impressive on a table but takes almost no effort to pull together, making it perfect for a weeknight wind-down or a backyard gathering.

Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar is fully dissolved, about 2 minutes. Remove from the heat and let cool for 5 minutes β the syrup should be clear and slightly thickened.
Divide the mint leaves evenly between two tall glasses. Add half the lime juice and half the simple syrup to each glass. Muddle firmly with a cocktail muddler or the handle of a wooden spoon, pressing and twisting 8β10 times until the mint is bruised and fragrant and the liquid turns pale green.
