Place the rinsed lentils and bay leaf in a medium saucepan and cover with 3 cups of cold water. Bring to a boil over high heat, then reduce to a steady simmer. Cook, uncovered, for 20–25 minutes, until the lentils are tender but still hold their shape — they should yield easily when pressed between two fingers with no chalky center. Stir in the 1/2 tsp salt in the last 5 minutes of cooking. Drain, discard the bay leaf, and set aside.
While the lentils cook, toast the pine nuts in a dry skillet over medium heat, stirring frequently, for 3–4 minutes until golden and fragrant — watch closely, as they can brown quickly. Transfer immediately to a plate to cool.
