Long-grain rice gets soaked overnight with fragrant cinnamon sticks until soft and lightly perfumed, then blended until silky and strained through cheesecloth for that signature milky, opaque texture. A touch of vanilla and just enough sugar round out the sweetness without overpowering the toasted, cinnamon-forward flavor this drink is known for. Poured over ice with a dusting of ground cinnamon on top, it's endlessly refreshing and easy to make ahead for a crowd. This version is a great fit for a lactose free lineup, so you can pour a tall glass without a second thought. It's the kind of make-once, sip-all-week drink that tastes even better the next day once the flavors have had time to meld.

Combine the rinsed rice, cinnamon sticks, and 4 cups of water in a large bowl or pitcher. Cover and refrigerate for at least 8 hours or overnight, until the rice has softened and the water is lightly cloudy and fragrant with cinnamon.
Discard the cinnamon sticks. Working in batches if needed, transfer the soaked rice and all of its soaking liquid to a blender. Blend on high speed for 2 full minutes, until the mixture is as smooth as possible and the liquid looks opaque and milky.
