Place the ham hock and 6 cups of water in a large Dutch oven or heavy-bottomed pot. Bring to a boil over high heat, then reduce to a steady simmer and cook for 30 minutes, until the broth is lightly flavored and the hock has begun to soften.
Add the rinsed black-eyed peas to the pot. Return to a simmer and cook, uncovered, for 20 minutes, until the peas are just beginning to soften but are not yet fully tender.
