Place the cubed potatoes in a large saucepan and cover with cold water by 1 inch. Bring to a boil over high heat, then reduce to a steady simmer and cook until the potatoes are just barely tender when pierced with a fork but still hold their shape, about 5ā6 minutes. Drain well and spread on a clean kitchen towel or paper towels to dry for 2ā3 minutes.
Heat 2 tbsp of the oil in a large (12-inch) cast iron skillet over medium-high heat until shimmering. Add the parboiled potatoes in a single layer and press them gently with a spatula. Cook undisturbed for 4ā5 minutes, until the undersides are deep golden brown and release easily from the pan.
