This Provençal flatbread is one of those breads that looks impressive but is completely approachable, built from nothing more than flour, yeast, olive oil, salt, and water. The dough comes together quickly, rises into something pillowy and alive, then gets pressed into that iconic leaf shape with slashes pulled open to create the signature lacework pattern. A brush of good olive oil and a scatter of flaky sea salt before baking gives the crust a gorgeous golden sheen and a satisfying crunch with every tear. Optional fresh rosemary adds an herby, aromatic note that makes the whole kitchen smell incredible. Since every single ingredient here is naturally free of stimulants, there is absolutely nothing to second-guess — no hidden additives, no tea extracts, no chocolate derivatives sneaking into the mix. It is the kind of bread that belongs at the center of a table, pulled apart by hand and eaten warm alongside soup, cheese, or just a drizzle of extra olive oil.

In a large mixing bowl, combine the warm water, sugar, and yeast. Stir briefly and let stand for 5–8 minutes, until the surface is foamy and the mixture smells yeasty.
Add the 3 tbsp olive oil and fine sea salt to the yeast mixture and stir to combine. Add the flour all at once and stir with a wooden spoon until a shaggy dough forms and no dry flour remains.
