This deeply satisfying lentil stew is built on layers of slow-cooked flavor — golden, jammy onions, toasted berbere spice, and rich niter kibbeh that together create something far greater than the sum of their parts. The red lentils break down into a thick, velvety stew that practically begs to be scooped up with a torn piece of injera or warm flatbread. Every single ingredient here is straightforwardly plant- or dairy-based, so there's no need to scan labels or worry about hidden fungi sneaking into your bowl. The berbere and tomato paste get bloomed directly in the pot, deepening the color and coaxing out a smoky, complex heat that tastes like it took all day — even though the active work is minimal. A final hit of fresh lemon juice brightens everything right before serving, cutting through the richness just enough to keep each bite lively. Scattered herbs on top are optional, but they add a fresh pop of color that makes the dish look as good as it tastes.

Heat the niter kibbeh in a large heavy-bottomed pot or Dutch oven over medium heat until melted and shimmering. Add the onions and cook, stirring occasionally, until deeply golden and jammy, about 25–30 minutes. Reduce the heat to medium-low if the onions begin to scorch at the edges.
Push the onions to the side of the pot and add the garlic and ginger directly to the cleared space. Cook, stirring, until fragrant, about 1 minute, then stir them into the onions.
