Soft, pillowy, and golden-brown on top, these classic dinner rolls are the kind of bake that makes the whole house smell incredible. The dough comes together with whole milk, butter, and a single egg, giving each roll a tender, slightly rich crumb that pulls apart beautifully at the table. Because the ingredient list is so clean and straightforward, there's nothing hidden to worry about — no spice blends, no seasoning packets, no mystery heat lurking in a store-bought mix. That matters a lot when you're managing sensitivity to capsaicin, since even something as innocent-looking as a packaged roll can contain paprika or chili-derived additives. Here, you control every ingredient from start to finish. The two-stage butter technique — softened into the dough and then melted on top right out of the oven — is what gives these rolls that bakery-style shine and irresistible flavor. Serve them warm alongside soup, a roast, or honestly anything, and watch them disappear before the main course even hits the table.

Warm the milk in a small saucepan over low heat until it reaches 105–110°F (40–43°C) on a kitchen thermometer — warm to the touch but not hot. Pour into the bowl of a stand mixer, sprinkle in the yeast and 1 tbsp of the sugar, and stir briefly. Let stand for 5–10 minutes, until the surface is foamy and the mixture smells yeasty.
Add the remaining 2 tbsp sugar, the salt, and the egg to the yeast mixture. Fit the stand mixer with the dough hook and mix on low speed until combined, about 1 minute. Add the flour all at once and mix on low until a shaggy dough forms and no dry flour remains, about 2 minutes.
