This deeply savory Japanese stock is built on just three ingredients β water, kombu, and bonito flakes β yet it delivers a clean, umami-rich broth that forms the backbone of countless classic dishes. The technique is all about patience and gentle heat: the kombu is scored and cold-soaked to coax out its natural depth, then removed before the bonito flakes are steeped just long enough to release their smoky, oceanic flavor without turning bitter. Because the ingredient list is so minimal and straightforward, there are no hidden seeds or seed-derived oils to worry about β what you see is exactly what goes into the pot. The result is a crystal-clear, golden broth that tastes far more complex than the effort involved would suggest. It works beautifully as a base for miso soup, noodle broths, or delicate simmered vegetables, and it comes together with a kind of quiet elegance that makes you feel like a proper kitchen pro. Make a batch, stash it in the fridge, and you'll find yourself reaching for it all week long.

Use kitchen scissors or a knife to score the kombu with a few shallow cuts along its surface, then place it in a medium saucepan with the cold water. Let it soak for 30 minutes, until the kombu has softened and the water has taken on a faint golden tint.
Set the saucepan over medium-low heat and warm the kombu and water slowly, until small bubbles begin to form at the bottom of the pan and the water reaches about 140β150Β°F (60β65Β°C) β just below a simmer. This should take about 10 minutes. Do not let the water boil.
