This deeply savory Japanese stock is built on just three ingredients β water, kombu, and bonito flakes β making it a naturally clean, gut-friendly base that fits comfortably into a low-FODMAP kitchen. The slow, gentle extraction method is key: scoring the kombu and warming it below a boil coaxes out its umami without releasing bitter compounds, while the bonito flakes steep off the heat for a broth that's delicate but remarkably complex. No onion, no garlic, no hidden high-FODMAP additives β just pure, golden stock that tastes like it came from a serious restaurant kitchen. It's the kind of foundation that makes everything it touches taste better, from miso soup to noodle broths to simple simmered vegetables. The technique is more meditative than difficult, and the payoff is a crystal-clear dashi with a clean oceanic depth that store-bought granules simply can't replicate. Make a batch, cool it down, and keep it in the fridge for up to three days β you'll find yourself reaching for it constantly.

Use kitchen scissors or a knife to score the kombu with a few shallow cuts along its surface, then place it in a medium saucepan with the cold water. Let it soak for 30 minutes, until the kombu has softened and the water has taken on a faint golden tint.
Set the saucepan over medium-low heat and warm the kombu and water slowly, until small bubbles begin to form at the bottom of the pan and the water reaches about 140β150Β°F (60β65Β°C) β just below a simmer. This should take about 10 minutes. Do not let the water boil.
