Few broths are as quietly powerful as this Japanese stock, built from just two ingredients β kombu seaweed and bonito flakes β steeped with patience and precision. Both kombu and katsuobushi are celebrated in nutritional research for their naturally occurring compounds that support a low-inflammation lifestyle, making this one of the most purposeful bases you can have in your kitchen. The technique here is all about gentle heat: the kombu is coaxed slowly through warm water well below a boil, then removed before the bonito flakes are added and left to steep undisturbed. That careful, low-and-slow approach preserves the delicate umami and the beneficial properties of both ingredients without degrading them. The result is a clean, golden broth with extraordinary depth β savory, slightly oceanic, and nothing like anything that comes out of a carton. Use it as a foundation for miso soup, noodle dishes, or sauces, and you're building every bowl on something genuinely nourishing from the very first step.

Use kitchen scissors or a knife to score the kombu with a few shallow cuts along its surface, then place it in a medium saucepan with the cold water. Let it soak for 30 minutes, until the kombu has softened and the water has taken on a faint golden tint.
Set the saucepan over medium-low heat and warm the kombu and water slowly, until small bubbles begin to form at the bottom of the pan and the water reaches about 140β150Β°F (60β65Β°C) β just below a simmer. This should take about 10 minutes. Do not let the water boil.
