Few side dishes deliver the kind of satisfaction that comes from a genuinely crispy roast potato — shatteringly crunchy on the outside, fluffy and steamy within. What makes this version so reassuring is how completely clean the ingredient list is: real potatoes, quality fat, salt, pepper, and a handful of fresh aromatics if you like. There are no spice blends, no seasoning packets, no store-bought shortcuts that might sneak in synthetic dyes or mystery additives. The technique does all the heavy lifting — parboiling until the edges go ragged, then shaking the pot to rough up the surface before the potatoes hit a screaming-hot pan of fat. That rough, shaggy texture is exactly what creates those deep golden, lacquered edges during roasting. Duck fat, goose fat, beef tallow, or a good olive oil each bring their own character, and every one of them is a whole, single-ingredient choice you can feel confident about. These are the kind of potatoes that disappear from the serving dish before you've even sat down.

Preheat the oven to 425°F (220°C). Place the fat in a large rimmed baking sheet and set it in the oven while it preheats.
Place the potato chunks in a large pot, cover with cold water by at least 1 inch, and add the kosher salt. Bring to a boil over high heat, then reduce to a vigorous simmer and cook for 10–12 minutes, until the edges are just beginning to look ragged and a knife tip meets slight resistance at the center — the potatoes should not be fully cooked through.
