Chocolate bark looks impressive but is genuinely one of the easiest things you can make at home, and this version delivers serious wow factor with its marbled swirl of dark and white chocolate. The combination of roasted almonds, pistachios, dried cranberries, and a finish of flaky sea salt hits every note — crunchy, chewy, rich, and just a little salty in the best possible way. Many store-bought chocolates and confections sneak in additives and flavor enhancers you'd rather avoid, so making your own from scratch puts you fully in control of every ingredient. The tempering process here — melting most of the dark chocolate, then stirring in the reserved chopped chocolate to bring the temperature down — is what gives the finished bark that satisfying snap and glossy sheen. It sounds technical, but it's really just stirring and watching a thermometer. Once you scatter the toppings and let everything set, you break it into rustic, uneven pieces that look like they came from a fancy confectionery. It keeps beautifully and makes a genuinely thoughtful homemade gift or a treat to have on hand whenever a chocolate craving strikes.

Line a large rimmed baking sheet with parchment paper and set aside. Divide the chopped dark chocolate into two portions: set aside about one-quarter (3 oz) in a separate small bowl, and place the remaining three-quarters (9 oz) in a heatproof bowl.
Set the heatproof bowl with the 9 oz of dark chocolate over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water. Stir frequently until the chocolate is fully melted and smooth, and registers 115–120°F (46–49°C) on an instant-read thermometer.
