Chocolate bark is one of those recipes that looks like it came from a fancy confectionery but is genuinely simple to pull together at home. The combination of deep, bittersweet dark chocolate swirled with creamy white chocolate creates a stunning marbled surface before you even get to the toppings. Roasted almonds and pistachios add satisfying crunch, dried cranberries bring a pop of tartness, and a final scatter of flaky sea salt ties everything together in the most addictive way. The tempering process — melting most of the chocolate, then stirring in reserved chopped pieces to bring the temperature down — is the secret to that glossy, satisfying snap when you break it apart. It sounds technical, but it's really just patient stirring and a thermometer. Every ingredient here is naturally free from lupin, which can sneak into store-bought chocolates and confections as a flour extender or protein additive, so making this from scratch gives you full control over what goes in. Break it into rustic shards and pile them onto a plate — it disappears fast, so you may want to make a double batch.

Line a large rimmed baking sheet with parchment paper and set aside. Divide the chopped dark chocolate into two portions: set aside about one-quarter (3 oz) in a separate small bowl, and place the remaining three-quarters (9 oz) in a heatproof bowl.
Set the heatproof bowl with the 9 oz of dark chocolate over a saucepan of barely simmering water, making sure the bottom of the bowl does not touch the water. Stir frequently until the chocolate is fully melted and smooth, and registers 115–120°F (46–49°C) on an instant-read thermometer.
